According to research conducted by William Paterson University titled “Defining Powerful Fruits and Vegetables: A Nutrient Density-Based Approach,” which analyzed the presence of 17 essential nutrients in selected foods, arugula received a score of 100 out of 100, due to its composition containing potassium. And fiber, proteins, vitamins A, B6, B12, C, D, E, K, iron, calcium, folic acid, thiamin, riboflavin, zinc and niacin. Then Chinese cabbage and Swiss chard come in second and third place, respectively.
